The singer, being someone who feels she is in daily need of such mercies, is celebrating the times which she actually perceived herself as being the recipient of such. And in relation to the title, one of the things she compares these experiences to is ‘holy water on her skin’. So the implication would be that the feeling of “holy water” is one that gives her great joy.
As for the storyline which is featured, it is premised on the singer being a “slave to sin”. Indeed the “desert roads” is likely a metaphor pointing to the idea of her life being in some of type of unfavorable state due to making consistently-wrong choices.
